Mike Kisow has posted a few Instructure Canvas course building tutorials at Vimeo.com which highlight some of the features of the fledgling LMS. All told there are 17 videos highlighting everything on the LMS from course construction/creation, to assignment and group management, to end of course activities and course deletion.   Each video is 3 minutes or less.
